Today we offer you a unique delicacy to give your dishes a very refined touch: a recipe floral fish-based featuring the Alaskan King Crab.
This crustacean, found in the Bering Sea, is considered an incredible resource, envied by seafood markets around the world. And as a testament to its value, Alaska has established strict regulations governing the sustainable management of its fishing.
Following extensive scientific research on this species conducted by the Ministry of Fisheries and Hunting, limits and catch zones for king crab have been established to protect the interests of fishermen on the one hand, and the need to preserve an extremely rare and precious ecosystem on the other.
Ingredients
King crab claws
Purple potatoes
Edible flowers as desired
Oil, thyme, garlic, salt
Preparation
- Peel the purple potatoes, cut them into small pieces, and sauté them with onion and oil, adding some vegetable broth. Once cooked, blend them;
- Slice more purple potatoes and fry them at 15°;
- Steam the imperial crab for 2 minutes, shell it and brown it in oil, thyme and whole garlic.
Presentation of the dish
- Spread a base of pureed purple potato and place the crab claws on top.
- Garnish with edible flowers as pansy, snapdragon, orchids, grass flower spring onion and small purple potato chips.
